Fall is full of good things, but one of our favorite parts is fresh fall produce! What better way to celebrate your favorite fall flavors than by throwing them together in a skillet? Keep warm with this healthy and homey recipe combining apples, pumpkin, and brussels sprouts.
Fall Flavors Skillet
1/2 tsp canola oil
¼ cup red onion, diced
12 Arctic® Golden slices
2 cups pumpkin, chopped and peeled
2 cups brussels sprouts, halved
1/2 cup chicken broth
1 Italian sausage
1 clove garlic
1 tsp garam masala
- Cook Italian Sausage, slice and set aside. Drain all fat from the pan and add canola oil, once hot add onion and cook until soft. Add broth, pumpkin and brussels sprouts. Cook until brussels sprouts are soft and broth is gone, about 10 minutes.
- Stir in apple slices, garlic, garam masala and sliced sausage. Cook for 2 more minutes.
- Serve as is, or with crumbled goat cheese on top for added flavor.
Vegetarian? Exchange the chicken stock for vegetable stock and leave out the sausage.
