Thanksgiving is just around the corner in the U.S. and that means it’s time to start planning your holiday feast. It’s always nice to incorporate something new into your traditional holiday menu and our Make-Ahead Arctic® Kale Salad is sure to be a welcomed addition to your family’s table.
The chicken in the recipe can easily be substituted with turkey, giving you another way to use up leftovers the next day. The best part is that with our nonbrowning Arctic® apples you can make this salad ahead of time, which means more time to spend with family and friends. 6 cups of curly kale, washed, dried, ribs removed, and cut into bite-sized pieces
½ cup of Dijon vinaigrette
10 oz. sliced Arctic® apples
2 cups of sliced grilled chicken breast
1 cup of whole grain of your choice (quinoa, farro, bulgur, barley), cooked and cooled
½ cup of shredded pepper jack cheese
¼ cup of roasted salted pepitas
¼ teaspoon of fresh-ground pepper
Toss kale with vinaigrette and place in large salad bowl or to-go container. Top with remaining ingredients. Cover and refrigerate until serving.
