Red, White and Blue Salad

This weekend we will be celebrating these two great countries for Canada Day on July 1st and Independence Day on July 4th. There are many reasons to be glad to live in these countries, among them being a safe and reliable food system provided by hard working farmers and people in the food and agriculture industry. We’ve decided to create a special salad as a nod to these National Holidays, and enjoy the bounty of nutritious foods produced here in North America.

This Red, White and Blue Salad pairs Arctic® apple slices with colorful strawberries and blueberries, so it is not only delicious, it is perfect to take for your Independence Day celebration! Celebrating Canada Day? Just use strawberries for your topping to be more reminiscent of the Canadian flag. Don’t forget: soon you’ll be able to prep your ingredients ahead of time, no need to worry about your Arctic® apples going brown and ruining the effect!

Arctic® Red White and Blue Salad

3 cups Arctic® apple slices, cut in half

1 cup celery, chopped

1 cup blueberries

1 cup strawberries, quartered

1/2 cup walnuts, lightly toasted

Dressing

½ cup whipping cream

1 cup vanilla yogurt

½ cup mayonnaise

2 teaspoons rice wine vinegar

¼ teaspoon vanilla extract

  1. Toast walnuts at medium-low heat in a non-stick cooking pan until crispy and slightly browned, being careful not to burn them.
  2. Whisk whipping cream until a soft whipped cream is form, you are better to under whip for this recipe. Add remaining dressing ingredients and combine.
  3. Combine chopped Arctic® apple slices, celery, toasted walnuts, blueberries and strawberries together, leaving some of the berries out for top dressing later. Pour dressing over your combined ingredients and mix until just covered, overmixing will cause your dressing to turn pink.
  4. Scatter remaining berries on top to make the salad pop.
